They are not sweet, and they are not breads, but they’re one of the most delicious parts of the animal. [“Sweetbread is a culinary name for the thymus or pancreas, typically from calf or lamb.”]*. By some sort of miracle, you can now get them at the the Food King on Montana and Copia.
A few quick tips on how to cook them:
- Do not, I repeat, do not be discouraged by the smell. Yes, clean them outside if you have to.
- Rinse them in cold running water until the water runs clear. It takes a while. It really helps to massage the “mollejas” with your hands. Some people soak them in milk for 24 hours.
- Grill them over a very low fire. They’ll take about an hour to get nice and crispy, but they’re worth the wait.
- If you’re a purist, all you need is salt, pepper, and lemon juice.
