Texas Monthly – Hallelujah—We’re Going to Have a Better Crawfish Season This Year

Peeling crawfish.When Dan Meaux, the owner of Crawfish Shack, heard the crawfish ponds of his Crowley and Jennings, Louisiana, wholesalers were completely frozen over for four days this January, he wasn’t sure how his business would fare. He knew his drive-through and dine-in restaurant in Crosby, northeast of Houston, couldn’t withstand another slow season like the one in 2024, and the record-low temperatures were not helping to ease his anxiety. Luckily, just a few days after the freeze, the ponds thawed and the mudbugs began to emerge from their burrows, albeit slowly. In the first weeks in February, Meaux’s wholesalers sold him a limited harvest. Another freeze, in late February, further diminished Meaux’s supply, but he thinks that will be temporary.
