Newer admirers, like Texas Monthly writer Hannah Smothers, have found themselves taking to the internet for ways to make character Augustus “Gus” McCrae’s oft-discussed sourdough biscuits. In the book, he cooks them over a campfire each morning, which you can certainly do (see the Notes section), but this recipe will get you similar results in your home oven. You will need some sourdough starter. Gus had kept his alive for a decade, but if you’re just starting out, here’s a guide to getting one going. We recommend baking the biscuits covered to trap steam, which helps achieve a similar texture to what the cattle drivers of Lonesome Dove would have enjoyed.Adapted from…
