Newer admirers, like Texas Monthly writer Hannah Smothers, have found themselves taking to the internet for ways to make character Augustus “Gus” McCrae’s oft-discussed sourdough biscuits. In the book, he cooks them over a campfire each morning, which you can certainly do (see the Notes section), but this recipe will get you similar results in your home oven.
