Every summer, Texans flee to Colorado to escape the pervasive summer heat. Some opt for outdoor activities, such as hiking and hot springs–dipping, and others prefer city living in the capital of Denver, which was part of Mexico until the 1848 Treaty of Guadalupe Hidalgo. Today the Mexican influence persists there. While it can be more challenging to find great tacos in Denver than in Texas’s major cities, there are still restaurants, trailers, and trucks worth seeking out. It’s typically at the mobile rigs where Mexican food shines, and you may have to escape city limits to find the best of the best.
