A food truck is “hopes and dreams on four wheels,” says Texas Monthly Taco Editor José Ralat. That’s what inspired him to visit a brightly colored, hand-painted taco truck run by a family of immigrants. His 2023 review of Rosas Kitchen details the northern Mexican cuisine and the hardships faced by the upstart owners.
